Veggy Jess is serving authentic vegan Mexican cuisine right here in Vista!

Jessica Castillo’s Veggy Jess has attracted a loyal following at the Vista Farmer’s Market every Saturday.  Her secret:  create vegan versions of Mexican cuisine that are authentic and enjoyable by non-vegans as well!

From Tijuana-inspired mulitas to SoCal California Burritos, Veggy Jess has a large menu to satisfy any appetite.  Each recipe has been crafted to match each authentic dish, replacing animal proteins with plant-based meats and cheeses developed by Jessica since switching to a vegan diet seven years ago.
